Sofia’s recipe for Arroz de Pato

Arroz de Pato

The Ingredients
Duck, rice, onion, garlic, salt and pepper, traditional meat chouriço, and red wine.

The Preparation
After being gently braised in red wine and chouriço, the duck is carefully shredded by hand, discarding the skin and bones.
A soft base of onion and olive oil is prepared, to which we add the rice and the rich, flavorful broth from the braised duck.
The duck and rice are then assembled in careful layers, crowned with slices of chouriço, and baked in the oven.

Small, savory pieces of chouriço are folded directly into the shredded duck filling, bringing unexpected depth to every bite.
